4 course meal I cooked for a private dinner party!
The theme of the 4 small courses was... Breakfast, lunch, dinner, and dessert.
- •Breakfast was a cheddar and dill mini quiche with lightly dressed arugula and paprika oil.
- •For lunch I did a loose take on a BLT but instead of bread, the vessel is ricotta gnocchi. The gnocchi are on a bed of sautéed swiss chard and are topped with slow roasted grape tomatoes, pancetta crumble, freshly grated pecorino Romano, a drizzle of a lemon cream sauce, and fresh parsley.
- •The dinner course was a big, braised, chicken thigh with crispy skin (of course). Also on the plate are a trio of risotto cakes, and a beet/caramelized onion purée.
- •Last but certainly not least, the dessert course was a salted caramel pot de creme with a fresh strawberry and chocolate foam.
