I served this in a burger form with lettuce, onion, tomato, goat cheese, and beet mayo. WARNING ... This is a LARGE batch (it's the exact recipe I used in my restaurant).
  1. 5 lbs dry garbanzo beans (submerge in water and let soak over night)
  2. 4 white onions
  3. 4 oz fresh parsley
  4. 4 oz fresh cilantro
  5. 25 garlic cloves
  6. 10 Tablespoons of kosher salt
    yes I know this measurement can be broken down, a few others will be able to as well. I find it easier to cut the recipe into smaller batches with these measurements
  7. 5 teaspoons white pepper
  8. 5 teaspoons coriander
  9. 10 teaspoons cumin
  10. 2.5 teaspoons cayenne
  11. 1 1/4 teaspoons cardamom
  12. Zest of 3 lemons
  13. Give or take 1 1/2 cups of flour. Enough to hold the mixture together
  14. Rough chop and run all ingredients EXCEPT flour through a food processor until mostly smooth. Hand mix in the flour until mixture holds the shape you'd like. Fry in canola oil at 350 F until golden brown and heated through. Enjoy 😊
