You don't need to eat as much meat on the paleo diet as you think. In fact, you can be a vegan and do this diet! It's more about living toxic free than anything else. So here are some meals I make with eggplant as the star (in most cases), and you don't need to add meat if you don't want to (but if you do, make sure it's from a healthy animal).
  1. EGGPLANT STEAK
