Cozy Af Chicken Soup

I'm home sick, and was desperate for some cozy soup. I found this intriguing recipe on @dev and I took it and put our own spin on it. It was AWESOME! Much more stew than soup, and perfect for a brisk fall day. Here's our version:
  1. Step 1!
    Throw a tablespoon of chicken stock into a pot. When it sizzles, add 1 cup chopped onions, 1/2 cup sliced leeks, 1/2 cup chopped celery and 1/2 cup sliced carrots. Stir around until everyone is soft. (You may have to add some more stock in as you go. That's ok. You do you.)
  2. Step 2!
    Add 1 tablespoon of minced ginger and 2 cloves of minced garlic. Toss that around, then throw in 1 tablespoon of turmeric (be liberal) (this is where the divergence from the original recipe begins. Strap in!) Stir this all up.
  3. Step 3!
    Add 4 cups of chicken stock, 1 roasted chicken breast (shredded up), and 1 cup of dry pearl couscous. Add in a dash of cumin, paprika and coriander. (What?? Indian spices in chicken soup? YES. Do it. And don't be stingy.) Bring this bitch to a boil, then drop it down to a simmer for about 15 minutes.
  4. Step 4!
    Season with salt and pepper! Eat and enjoy!
