  9. Any vegetables
    Pretty much any vegetable can be cut up and tossed with olive oil, salt and pepper. Onions, red pepper, mushroom, carrot, brussels sprouts, broccoli, cauliflower, any squash, any potatoes. One layer, really any temp from 350-450 will work fine so you can have something else in there too, roast until tender and browned/caramelized. It's honestly hard to mess up and can easily be varied.
