RECIPE FOR THE PERFECT FRIED EGG

I could never get this right until Suzanne Goin showed me the way. This is almost verbatim from her A.O.C. cookbook.
  1. Heat a non stick or cast iron pan over high heat for 2 min.
  2. Swirl 2 tablespoons olive oil and crack as many eggs as will fit comfortably on the pan (probably no more than three)
    Since I'm usually only making one egg, I use a small non stick and less oil.
  3. Turn off the heat (!) and season the eggs with salt & pepper.
  4. The eggs should cook slowly and completely from the heat of the pan.
  5. Enjoy your egg 🍳🍳🍳
