RECIPE FOR THE PERFECT FRIED EGG
I could never get this right until Suzanne Goin showed me the way. This is almost verbatim from her A.O.C. cookbook.
- •Heat a non stick or cast iron pan over high heat for 2 min.
- •Swirl 2 tablespoons olive oil and crack as many eggs as will fit comfortably on the pan (probably no more than three)Since I'm usually only making one egg, I use a small non stick and less oil.
- •Turn off the heat (!) and season the eggs with salt & pepper.
- •The eggs should cook slowly and completely from the heat of the pan.
