Homemade Phó

Had a craving... So to meet that craving and not order a potentially poisonous MSG laced, sodium overload I didn't order in. I made it, myself with what I had in the fridge.... It wasn't awful - In fact it was actually delicious. Hard core Phó Police this is not a traditional trip, I used what I had at hand.
  1. 1 stalk Lemon Grass
  2. 1 bunch coriander Stems
  3. 1 bunch spring onion stems
  4. A large knob of ginger root
  5. 3 garlic cloves
  6. 2 carrots
  7. 2 celery stalks
  8. 1 large brown onion
  9. 2 star anise
  10. 6 cloves studded the onion
  11. 1 stick of cinnamon
  12. 12 white pepper corns
  13. 1/2 lemon from my tree
  14. 2 chicken legs and thighs
  15. A slosh of Tamari soy sauce
  16. Salt
  17. First I put everything EXCEPT the chicken and garlic, lemon and soy sauce - into a pot and covered it with cold water. Once it started to boil added the Chicken, lemon, & garlic cloves to the pot and reduced the heat to a low simmer for 1 hour. Mid way through I added a slosh of Tamari soy sauce because unfortunately I'm allergic to fish sauce.
  18. After about an hour I fished pur the chicken and séparateur all the meat. At this point I also cooked a packet of Vietnamese Phó noodles (2 minutes)
  19. Once the noodles were cooked and drained I added some to a bowl, topped with the chicken and then added bean sprouts, finely sliced spring onion, basil leaves torn, fresh coriander leaves and a birds eye chili chopped up
  20. Then topped the above with the broth, squeezed half an extremely juicy lemon into it and added some more Tamari
  21. It was soooooo good
