  1. 2 tsp fine Indian chili powder (sub cayenne if you can't get the chili powder).
    Use 1 tsp for a milder recipe.
  2. 1 tsp garam masala powder
  3. 1/2 tsp turmeric powder
  4. 1 tsp coriander powder
  5. 1 tsp cumin powder
  6. 1 inch fresh ginger, grated
  7. 1 tsp freshly minced garlic
  8. 1/8 tsp mace
  9. 1/8 tsp nutmeg
  10. 1/8 tsp powdered aniseed
  11. Tada!
  12. Shortcut method: buy Shan brand Chicken Tikka BBQ spice mix (usually around $2 at a good Indian grocery) and use 1/3 packet in place of this recipe.
