RECIPE: SWEET POTATO MUFFINS

I'm a disaster in the kitchen so you best believe if I can make something, it's easy. This is a composite of a bunch of different recipes that I used in order to create the simplest recipe. Also, I say muffins but they're pretty much cupcakes they're THAT delicious.
  1. INGREDIENTS FOR BATTER:
  2. 2 cups self-raising flour
    Or use regular flour with baking soda if you're a purist.
  3. 2 cups sugar
    I used white because we were out of brown. Use what you like.
  4. 2 teaspoons ground cinnamon
  5. 1 egg
  6. 2 cups cold mashed sweet potatoes
    No added butter or milk. I bake mine in the oven for an hour and then the skin is super easy to peel and the flesh is nice and soft.
  7. 1 cup canola oil
  8. METHOD FOR BATTER:
  9. Preheat oven to 180C or 375F
  10. Combine sugar, flour, cinnamon
  11. Whisk egg, sweet potatoes and oil in a separate bowl
  12. Stir wet into dry ingredients just until moistened
  13. Grease muffin cups and fill them about 2/3
  14. Bake 15-18 minutes
    Because they're so dense it's hard to tell when they're ready so the toothpick test is useful here. But also be careful because once they're ready, they overcook very quickly!
  15. Take out of oven. Cool for a few minutes then put them onto a cooling rack.
  16. Resist temptation to gobble immediately.
  17. INGREDIENTS FOR ICING:
  18. 4 tablespoons softened butter
  19. Half cup sour cream
  20. Half teaspoon vanilla extract
  21. Half teaspoon lemon juice
    Personally I prefer squeezing the lemon juice myself rather than buying ready made.
  22. Quarter teaspoon salt
    LOL. I just add to taste.
  23. 2 and three-quarter cups icing sugar/confectioners sugar/whatever you call it in your region.
    The stuff you make frosting with okay.
  24. Quarter cup chopped wallnuts
    Optional, apparently, but I can't imagine it without it. Unless you're allergic. 😷
  25. METHOD FOR ICING
  26. Mix together all ingredients except the icing sugar
    It looks too little - don't stress!
  27. Slowly sift in the icing sugar - keep it smooth!
    Either with an electric beater on low speed, or by stirring with a fork every few seconds.
  28. When the muffins are sufficiently cooled, cover in dollops of icing. Add chopped nuts.
  29. Enjoooooy!
