1. I've tried dozens of recipes and I always come back to this one. It is simple and delicious!
  2. I rarely measure when I cook, but when you bake, it's a must!
  3. 1 1/2 cups AP flour, 1 teaspoon baking soda, large pinch of sea salt.
    Sift dry ingredients together.
  4. Put 4-5 medium-sized, overripe bananas in a food processor. Add 1 Tablespoon of pure vanilla extract, 1 cup of granulated sugar and 4 Tablespoons of softened butter or coconut oil.
    I use 2 Tablespoons of each. (And sometimes I use large bananas!)
  5. Purée until completely smooth. Add 1 egg and pulse until mixed well.
    Add dry ingredients to the processor and pulse ONLY UNTIL IT IS BARELY COMBINED.
  7. This ensures it stays moist and isn't overworked.
  8. You can add toasted walnuts and/or chocolate chips, at this point.
    I don't actually measure this part! Maybe, a heaping half cup..?
  9. Use rubber spatula to combine. Again, be gentle!
  10. Pour into a buttered (or sprayed) loaf pan.
    I suggest you invest in a nice, stoneware, say Pampered Chef's..
  11. Bake at 350° for 65 minutes.
    Let cool on a rack.
