Poor man's ratatouille

  1. 1 can Italian style stewed tomatoes
  2. Two squash thinly sliced
  3. One zucchini thinly sliced
  4. 2 teaspoons olive oil
  5. 1 tablespoon minced garlic
  6. Put everything in a pot, heat until veggies are tender.
  7. Serve on rice, noodles, quinoa , couscous
  8. Enjoy.
