  1. The lazy girl's guide to good eats. I'll make another list with all my favorite recipes but for now enjoy this super easy nom.
  2. You'll need:
  3. Riced Cauliflower
    I buy it frozen from trader joes because its cheap and I'm a lazy AF, but if you wanna make it yourself you just get a big hunk of cauliflower and grate it into "rice"
  4. Veggies
    Again, I just go to Trader Joe's and buy their "Asain Stir Fry" mix but if you wanna do this the hard way it's red peppers, white onion, snap peas, mushrooms, bamboo shoots, carrots (I add extra because I love em), broccoli, garlic.
  5. Heat some coconut oil in a pan (like a teaspoon) and throw in the cauliflower
  6. When it starts to get translucent, throw in the veggies
  7. I cover the pan for a minute or two so that the veggies steam a little
  8. Add like a tablespoon more coconut oil
    If ya got sesame oil you should add a lil bit of that too, but I'm a coconut oil whore so that's usually all I go with.
  9. Start browning those veggies
  10. In a separate pan, scramble two eggs
  11. Add Bragg's Liquid Aminos to taste and a splash of Apple Cider Vinegar (Rice vinegar might be better but I didn't have any)
  12. Throw in some chopped green onion and some ginger if ya got it
  13. Add the scramble
  14. I like to add some tempeh for extra protein (I buy Dave's from the studio city farmer's market but add tofu or chicken or whatever your lil heard desires)
  15. Mix it around
  16. If ya wanna get crazy throw in some crushed cashews and chili flakes
  17. If you wanna get SUPER crazy LIVE ON THE EDGE and add some pineapple chunks when you throw in the veggies
    It's not for everyone but I LOVE it. Especially with the coconut oil flavor. My god.
  18. and that's it.
  19. Maybe steam a lil Bok Choy to serve on the side.
  20. BOOM. Dinner's done and it took like 20 minutes.
