  1. This soup is delicious and has a little bit of everything in it.
  2. Kielbasa
    One package, diced up and sauté in some olive oil in your soup pot to render some of its fat. You could use fancier stuff, but there's a lot going on and you really don't need to.
  3. Once the sausage has browned up some add
  4. One big yellow onion, chopped up. White is fine, two medium onions are fine, etc.
  5. One red bell pepper, chopped up
    You want to have stuff roughly the same size, but your friends and family aren't going to care if it's perfect.
  6. Three or so carrots, chopped up
    I cut these smaller so they cook through.
  7. Salt, pepper, a few bay leaves, some fresh thyme if you have it. Sauté everything up for a few minutes until the onions start to soften up.
  8. About 3-4 lbs of Yukon gold potatoes, peeled and diced up. Red-skinned potatoes are fine, boiling potatoes are better than baking, use russets if it's all you have and it'll still be fine.
  9. Two or three cans of creamed corn.
    These add body and flavor.
  10. 4 cups each milk and water
    A little more, a little less depending on your veg.
  11. A big spoonful of this.
    You could use chicken stock instead of water, bouillon cubes if you must, even just water and a little extra salt.
  12. Bring it all to a boil and then turn down and simmer for 15 minutes or so.
  13. Then add a few cups of frozen corn-or fresh if you have it.
  14. A pound of bay scallops-fresh, frozen, shrimp will work, clams will work, firm whitefish in cubes will work.
  15. Simmer for a few more minutes until seafood is done and all the vegetables are tender.
  16. At this point your chowder may be thick enough. If so, remove the bay leaves, check for seasoning, and enjoy.
  17. If not, mix a little cornstarch and a little milk and add to the simmering soup and stir for a few minutes. It'll thicken up a bit and be delicious.
  18. If you want to be super decadent you can add a little bit of heavy cream, stirred in at the end, but it's not necessary.
  19. Eat!
