[FOOD PORN WARNING] HOME ROLLED FETTUCCINI CON FUNGHI

Welcome back to my kitchen.. 💁🏻 today we're cooking a meal from my Mum's side of the family, from northern Italy. My Nonna on my Dad's side actually taught me how to make pasta from scratch, but I have a more northern palate.

    Set your scene.. choose your music.
    I'm cooking a romantic dish, so it's Alicia Keys radio!

    Nonna essentials: apron and bandana. Clean hands, rings off.
    Mine is my beloved @anthropologie apron and my Mayer merch bandana (@scotty shout out ✌🏼️).

    Pasta (fettuccine) ingredients: 600 grams(ish) of 00 plain flour and 6 eggs.
    00 flour is also known as Tipo 00 or doppio zero.. it's a finely milled flour essential for a smooth pasta.

    Let's do this!.. Pour your flour onto a clean bench, make a well in the middle (like a crater), add the 6 eggs.
    Yes, Aussie eggs have orange yolks ☺️

    Be super careful while incorporating the flour into the egg using your fingers
    Don't worry, things got messy for me too, so I just worked it in quickly.. Get your hands in and pull the dough together.

    This is messy work! Even harder one handed! 😉

    You want to clean your work bench as you go incorporating all the dough and knead, knead, knead..
    Or as I described it to @Lisa_Fav (fellow food porn'er), give your dough a good hand job.

    You need to be at this until the dough is smooth and elastic. Get the guns out and be ready to work it for 10-20 minutes (depending on how athletic you are!)

    Let's talk technique.. You want to press the dough out, roll it around and then press out over itself. This really is more of a two-hand job ☺️
    Also, this is a great time to crack out the white wine (you'll need it later) and have a filthy day dream about your celebrity crush..

    Only when your dough is smooth and springs back is it ready. This is key, if it's not worked enough it won't roll properly
    Throw a damp cloth over it and finish that damn day dream!

    Ok, back to it.. portion out your dough (equal size it great but not imperative). Put the dough under a damp cloth so the dough doesn't dry out.

    For the next part you'll need a pasta rolling machine.. usually under $30 from an Italian supplies/grocery store.
    If you don't have one, give this a shot.. Dust your surface in 00 flour and roll it as thin as you can with a rolling pin (or the bottle of wine).. no more than a millimeter thick and cut strips with a very sharp floured knife.. good luck!

    Flatten your piece of dough, and then adjust your rollers to setting 1.. Put it through a couple times.
    You want to try and aim for a rectangle shape

    This is a technique my Nonna taught me.. I find you have to pull gently ..on the dough to get the shape even.

    Keep progressing through the roller settings.. don't forget to dust with flour. If your pasta is perfect you won't need to dust it as much though.
    I use settings 1, 2, 3, 5 and 7. If your pasta starts to break, it's not kneaded enough.. Wet your hands, put all the dough back to one ball and knead til smooth!!

    Add the fettuccine attachment and start rolling your pasta.
    Pre-prep!.. an area to put your rolled pasta on. Either on a towel on the bench or a drying rack.

    Keep your pasta as separated as possible (i.e., not as pictured!) and definitely dusted with flour to prevent sticking.

    Ok!.. Time for the 'sauce'.. This part of the recipe is a home favourite. Pasta con funghi (pasta with mushrooms) is a family hand-me-down recipe.

    Ingredients: a big bowl of mushrooms (I used 3 thickly sliced large mushrooms and a handful of thinly sliced small mushrooms), big handful of sage, crushed garlic, 1 sliced onion, 2 knobs of butter, a splash of olive oil and salt and pepper (also, I totally forgot to add nutmeg, but put a little in, it's a game changer!)
    Any mushrooms will work.. add some porcini if you have them for a more intense flavour.

    Put a pan on high heat, melt your butter, add your onions.. Sauté them with sex appeal.
    Add some salt

    Add the mushroom, sage and garlic
    Splash with olive oil and sauté with sex appeal

    Add a decent splash of quality white wine. Avoid Chardonnay if you can
    I don't like Chardonnay and neither should you ☺️

    Take in the orgasmic smells and give yourself a minute. Take off the heat.
    Also, put a pot of water on the boil, add some salt (big pinch).

    Watch something interesting on TV..
    Keep your eye on the stove.. don't get tanked yet!.. wait for your pot of water to boil.

    Add a handful of pasta per person that you're feeding to the boiling water. Bring back to the boil. Fresh pasta takes 2-4 minutes to cook.

    Put your mushroom mix back on a low heat (if it's too dry, add another splash of wine). You'll need some of the starchy water to help with your 'sauce'.. so drag the pasta across using tongs.

    After mixing the pasta and mushroom mix around, season generously with salt and pepper.. Pimp it out; I've added pine nuts and feta.. and I would have added rocket (arugula) if I had it.
    Serve to your starving loved ones. I'm not going for presentation on this dish, just taste satisfaction 😍

    Hand rolled pasta is super easy, but a labor of love. Give yourself a few hours.
    You can make the pasta the day before if you want to give yourself more time. If you plan to dry your pasta, I recommend using a drying rack. Tip: I usually use my clothes drying rack and put a towel under it 😉
