THE BEST GRANOLA YOU'LL EVER EAT

Adapted from the NY Times Olive Oil Granola recipe.
  1. PREHEAT OVEN TO 300
  2. MIX ALL INGREDIENTS IN A BOWL
  3. 3 C rolled oats
  4. 1 C pepitas
  5. 1 C coconut chips
  6. 1 C raw cashews
  7. 1/2 C sesame seeds
  8. 3/4 C maple syrup
  9. 1/2 C olive oil
  10. 1/2 C Lt brown sugar
  11. 1 tsp kosher salt
  12. 1/2 tsp cinnamon
  13. 1/2 tsp cardamom
  14. SPREAD ON A PARCHMENT LINED BAKING SHEET
  15. COOK FOR 35-40 MINS
  16. STIR EVERY 10 MINS
  17. This is best when everything is toasted. But not very good when burnt.
  18. Add dried fruit if you're feeling fun
  19. Add chocolate chips if you're feeling decadent
