I made pizza for dinner tonight

  1. I started by making the dough.
    I use Jamie Oliver's bread recipe in his first cookbook with one small addition.
  2. I measure 150ml warm water into a measuring cup and sprinkle 2 x 7g sachets dried yeast into the water along with about 15g sugar.
  3. I let it sit for a few minutes until it gets a little frothy.
  4. Then I add a drizzle of olive oil to the yeast mix.
    My addition. Idk, I just like olive oil in my pizza dough.
  5. I measured 500g flour into a bowl and stirred in 15g salt. I then poured the yeast mixture in. I measured out another 150ml warm water and poured about 3/4 of that into the flour.
    I like to start this in a bowl cause I have a small bench and flour tends to go everywhere. If you have ample bench space you could skip the bowl and do this straight on the bench.
  6. Mix a little and then tip the mixture onto the bench.
  7. Knead the dough until everything is incorporated. You might need to add a little more water or a little more flour.
  8. Start kneading! I knead for about 5-6 minutes.
  9. Until it looks like this.
  10. I spray some olive oil spray into a bowl, pop the dough in and lightly spray the top of the dough.
    This is so when it rises, the surface doesn't get all dry and crusty.
  11. Cover with a tea towel and place in a warm spot until doubled in size.
    Mine took 45 minutes.
  12. Turn it out into the bench.
    I made a double batch so I can use some later in the week, maybe make a sexy calzone mid week or something. I just put it back in the bowl, covered with cling wrap and put it in the fridge.
  13. Lightly knead the other half and roll it out...
  14. ...until it fits your pizza tray.
    I lightly spray the pizza tray so it doesn't stick when cooking.
  15. Top with sauce.
  16. Caramelized onions.
  17. Pan fried mushrooms and garlic.
    Basically, these were the only pizza appropriate toppings in my fridge. I wasn't in the mood to experiment with broccoli as a topping. I've seen it done, I'm just not convinced.
  18. Top with spoonfuls of vegan mozzarella.
  19. Bake in a oven that's preheated to about 200C and cook for about 15-20 minutes.
    I popped it under the grill at the very end cause I like my vegan mozz a little browned on pizzas.
