Breakfast at work isn't limited to pastries in crinkled bags, folks. On Sundays, when I'm already prepping dinner, I'll dice the veg, scallions and tofu for this. Keeping miso, hot sauce and sesame oil at work is a wise move, too 👌🏽
  1. In a bowl, scoop one heaping tablespoon of miso. Add about 1/4 cup hot water and whisk with your spoon or fork.

  2. Add about one cup of diced vegetables (I like zucchini and baby carrots), and 1/2 cup of diced firm tofu.
  3. Add more hot water to fill the bowl. Drizzle with Sriracha and sesame oil, sprinkle in chopped scallions.
