HOW TO MAKE PETROGRADSKA TORTA

In case you decide to have a big Serbian Christmas party of your own, here's the recipe for my favourite Serbian dessert.
  1. Ingredients:
  2. 1/2 pound salted butter
  3. 3 egg yolks
  4. 8 egg whites
  5. 3 cups flour
  6. 1 cup powdered sugar
  7. 1 jar apricot jam
  8. 1 pound ground walnuts
  9. 3/4 pound granulated sugar
  10. Instructions:
  11. Preheat the oven to 325-350F
  12. Prepare the dough (@donnie 😉)
  13. By which I mean...
  14. Cream butter and powdered sugar
  15. Add egg yolks and flour and beat until smooth
  16. Roll out dough
  17. Butter and flour a deepish rectangular baking tin
    Don't forget the sides!
  18. Cover the bottom with the dough
    It's okay to press it down with your fingers - it'll all be covered with other stuff, so it doesn't have to be neat.
  19. Spread the apricot jam as evenly as you can over the dough
  20. Mix together walnuts and granulated sugar
  21. Beat egg whites until stiff peaks form
  22. Fold in walnut mixture
  23. Pour egg white and walnut mixture over dough and apricot jam, as evenly as possible
  24. Bake for about an hour
  25. To check doneness, cut a small piece from the side --- the bottom should be faintly starting to brown. Faintly.
  26. Use a wetted knife to cut, first cutting around the sides.
  27. Serve in small squares
