My Favorite Kale Salad
My friend Merida made this for me and now it's my favorite. Chop everything bite sized. Yeah kale is a thing but so what. This is good for you.
- •Kale (lots)
- •Healthy dose of parsley (this is key!!)
- •Endive (just some for bitterness)
- •Fennel (for crunch)
- •Dried cranberries or currants
- •Quinoa (enough to make it feel hearty)
- •Lots of lemon juice and olive oil.
- •Splash of apple cider vinegar.
- •Salt to taste
