My friend Merida made this for me and now it's my favorite. Chop everything bite sized. Yeah kale is a thing but so what. This is good for you.
  1. Kale (lots)
  2. Healthy dose of parsley (this is key!!)
  3. Endive (just some for bitterness)
  4. Fennel (for crunch)
  5. Feta
  6. Pistachios
  7. Dried cranberries or currants
  8. Quinoa (enough to make it feel hearty)
  9. Lots of lemon juice and olive oil.
  10. Splash of apple cider vinegar.
  11. Salt to taste
