Simple Veggie Lunches

I'm not at all vegetarian, I just like these.
  1. Baked sweet potato halved and smashed w/ a little coconut oil. Topped w/ watercress, avocado and whatever seasonings your heart desires
  2. Roast/blackened cauliflower, seasoned w/ curry powder. Topped w/ tahini-miso sauce and chili paste or hot sauce.
  3. Salad of watermelon, cherry tomatoes, feta, thinly sliced red onions and basil
  4. Roast golden beets and delicata squash over butter lettuce w/ avocado and garlicky vinaigrette
  5. Very soft scrambled eggs + simple salad + hunk of baguette
