Simple Veggie Lunches
I'm not at all vegetarian, I just like these.
- •Baked sweet potato halved and smashed w/ a little coconut oil. Topped w/ watercress, avocado and whatever seasonings your heart desires
- •Roast/blackened cauliflower, seasoned w/ curry powder. Topped w/ tahini-miso sauce and chili paste or hot sauce.
- •Salad of watermelon, cherry tomatoes, feta, thinly sliced red onions and basil
- •Roast golden beets and delicata squash over butter lettuce w/ avocado and garlicky vinaigrette
- •Very soft scrambled eggs + simple salad + hunk of baguetteAll time favorite
