Senegalese Peanut and Sweet Potato Stew

    What you need:
    2 med. onions // 1 med. green pepper // .5 lb of uncooked, sweet potatoes cut into .5 in. pieces // 2 med. carrots peeled and thinly sliced // 2 cloves of minced garlic // 2 tsp. ginger root // .5 tsp. ground cloves // .5 tsp. salt // 1/4 tsp cayenne pepper // 4 cups vegetable broth // 6 tsp. peanut butter // 8 cups fresh spinach

    Set a large saucepan to medium heat.

    Cook onion and bell pepper until softened
    About 3 minutes.

    Add sweet potatoes, garlic, and carrots.
    Cook for 1 minute.

    Add ginger, cloves, salt, and cayenne pepper.
    Cook for around 30 seconds.

    Add vegetable broth and bring to simmer.

    Add peanut butter until smooth.
  8. 8.
    Cover saucepan and reduce to low heat.
    Cook for about 30 minutes or until sweet potatoes are tender.

    Add spinach.
    Cook for 10 minutes.
