1. Vegan Pumpkin Muffins
My favorite thing in the world this time of year was to walk into our house and smell the vegan pumpkin muffins my mom would make for us. She would make a million of them, and I would sit at the counter and dip the hot ones in local apple butter.
  2. Spaghetti
When my brothers and I were swimming all the time, we would come home late and tired. My parents would make spaghetti for us all the time, sometimes three-four times a week, because it was a quick warm dinner that we all liked.
  3. Alternative Baking Company cookies
We could only get these cookies at swim meets of Whole Foods, and they were our absolutely favorite! They're completely vegan, and we would eat tons of these in between races. My mom would always eat the lemon poppyseed and I would get the double chocolate.
  4. Goat Cheese Mac n Cheese
When we stopped eating dairy, my grandmother decided we needed to start eating goat cheese because it didn't have as much casein in it. So, she would make massive amounts of goat cheese mac n' cheese for us when we went over to her house and I was the only grandchild who actually liked it.
