School of Broc: 3 Delicious Uses for the Stems 🌱🌱🌱
You buy a big bunch of broccoli, paying by the pound, and end up discarding most of it bc you just want the tops. You feel like a bad and wasteful citizen, but those stalks are useless clunkers, right? Wrong! Just slice off the bottom 1/8 inch, shave the tough skin w a veg peeler, and you now have highly edible/sweet/tender stems, ready to become:
- •Stir-Fried Broccoli MatchsticksCut the stems into little sticks of whatever dimension you decide and toss in a hot olive oil-slicked skillet. Stir-fry over high heat w salt & pepper and maybe some touches of garlic and chili flakes. Two minutes or less. Tasty! Revelatory!
- •Broccoli Stem SlawRun the peeled stalks thru a food processor fitted w the grating attachment. (Lightly coat the machine first w nonstick spray for easier cleanup.) Dress with a little of your favorite vinegar; season w salt, pepper, a touch of sugar. Can grate in some carrot if you like, or just eat it plain as a refreshing snack while you're cooking dinner.
- •Broccoli Stem Sort-Of PicklesMatchsticks again, only this time put them in a small jar and marinate in your preferred salad dressing for a few hours or a day. Highly imprecise, no rules, very delicious.
