RECIPE: my favorite salad

  2. 1/2 cup of toasted buckwheat
  3. 1&1/2 cups cold water
  4. a very small yellow onion
    chop it
  5. a can of chick peas
    rinse your beans please
  6. a large garlic clove
    mince it
  7. a few sprigs of fresh dill
    you can use dried if you want
  8. some red leaf lettuce
    or whatever lettuce you want I guess
  9. some spring mix or baby spinach or other leafy greens
    I like power greens mixes the best
  10. lemon juice
  11. half an avocado
    cube it
  12. WHAT TO DO:
  13. put water and buckwheat in a small pot and bring to a boil. reduce to simmer for 10-15 mins or until all of the water is gone
  14. sauté the onion until quite caramelized, then add the garlic, chick peas, and dill
    season with salt and pepper
  15. chop up your lettuce and greens and divide into portions
    throw in some other veggies if you like! I added cucumber this time
  16. combine the buckwheat and sautéed onion/chickpeas. spoon some on to each serving of lettuce
  17. dress with lemon juice and avocado
  18. NOTES:
  19. it makes like 2-4 servings depending on how hungry you are. just increase the buckwheat if you need more!
    I keep the leftover buckwheat and chick pea mixture in a container in the fridge and just chop up more lettuce when I want it.
  20. if you don't have any avocado, try drizzling a little bit of tahini on with the lemon juice
    gotta get those healthy fats
  21. sauté some mushrooms with your onions if you're into that or if you want to make the recipe go a little further
