Top 9 New Dinner Recipes of 2016

One of our goals for 2016 was to get better at cooking, to try *new* recipes, and to find at least a few fish recipes that I like. I bought a weekly planner for the fridge and we actually stuck to it. The end result? We're going into 2017 with a fresh roster of favorite dinner recipes including YES one fish dinner that I genuinely really like.
  1. Chicken Cordon Bleu Grilled Cheese
Great way to use up some leftover rotisserie chicken.
  2. Grilled Lemon Chicken with Basil-Feta Rice
Literally the easiest thing you will ever make as long as you remember to marinate the chicken 30 minutes before you start cooking.
  3. Spicy Chorizo Shepherd's Pie
I'm drooling just thinking about the prospect of getting to eat this again. So good. And it makes a lot so you WILL have leftovers.
  4. Mahi-mahi Saltimbocca
The only fish recipe I actually eat. And I don't like fish.
  5. Easy Chicken & Dumpling Soup
The best thing to eat when you're feeling sick. We mince the veggies and onions so they get nice and silky in the broth as it cooks.
  6. Teriyaki Chicken Drumsticks with Curry Rice Pilaf and Tropical Fruit Salad
The fruit salad is no freaking joke — the cilantro on it is a game changer.
  7. Chicken with Artichoke Pan Sauce
If I ever forget to plan ahead this is my go-to dinner. It never fails.
  8. Chicken & Rice Noodle Stir Fry with Ginger and Basil
Fresh ginger is a must for this one. I tried it with bottled ginger recently and it was way too sweet.
  9. Pork Chops with Sautéed Apples and Brussels Sprouts
Everything about this is amazing and delicious combined together on one plate.
