  1. Monday: Mom's Lettuce & Walnut Salad w/Chicken

    🍽 Dressing: 1/2 cup oil, 2 TBSP each vinegar & lemon juice, 1/2 tsp each salt & sugar, 1/4 tsp each mustard powder, pepper, paprika, 1 TBSP dill. ✅ Instructions: Mix dressing ingredients together and toss over shredded romaine and slivered carrots (and anything else you want to add in). Toast walnuts in pan with 2 tsp oil, transfer to paper towel and sprinkle with garlic salt, add to salad before serving.

    Verdict: Neither of us are a fan of tomato chunks in soup, so next time we make it we'll purée them, but other than that, YUM. It was even great as cold leftovers for dinner the next day. Recipe:
  4. Saturday: Spicy Black Bean Burgers w/Chipotle Mayo

    Verdict: OKAY so we meant to make these on Friday night but didn't read the recipe in advance, which calls for freezing the burgers before cooking them. So we made and froze them Friday night while ordering takeout, then, since we had a wedding Saturday night, made these for lunch. In terms of the taste...they're not quiteeeee a replacement for a real meat burger, but they're good! Recipe:
