    Longer answer: garam masala is the pumpkin pie spice of India. Ingredients vary, but a basic composition includes black peppercorns, mace, cinnamon, cloves, brown cardamom, nutmeg, green cardamom, sometimes bay leaf. It's spicy, aromatic, and a little sweet. And it's here to spice up your life (every boy and every girl! people round the world!).
  2. Baked tofu
    This is my OG garam masala recipe. Get some extra firm tofu, squeeze out as much water as possible with a paper towel. Cut into small cubes, put in a bowl and spice with salt, pepper, garam masala. Spray a cookie sheet with non-stick spray, throw the cubes on it, spray THEM with non-stick spray, and bake at 400 until crispy, spicy bite size nuggets with soft centers are yours to devour (appx 20 mins).
