I started making this dressing in 8th grade. I cannot recall where I came upon it. It's great, not sweet, so if you're having a salad with, say, clementine slices...you'll likely want a different dressing. This is for green salads--lettuce, cukes, onion, whatever you like in your green salad. Sometimes I use red leaf lettuce--still works!
  1. You need: 2/3 c canola or safflower oil; 3 tbsp vinegar; 1 tsp salt; 1 tsp sugar.
    You can experiment with vinegars--red or white wine, balsamic--those are my typical go-tos. They work well.
  2. 2-3 cloves garlic.
    I use a garlic press though I recognize foodies think that's a cheat somehow.
  3. Lemon juice.
    I typically juice 1/2 a lemon, but sometimes the spirit moves me to use the whole. damned. fruit.
  4. Shake it up. Don't overdress (this in fact is a doubled recipe, so it lasts for several salads).
