    Cheese, usually sheep's milk, aged in pits carved into the volcanic rock under the town of Sogliano sul Rubicone in Romagna, Italy.
  3. Parmigiano-Reggiano
    It's called the king of cheeses for a reason.
  4. Squacquerone
    Special to Bologna, something between cream cheese and ricotta.
  5. Pecorino romano
    Really an all purpose cheese.
  6. Caña de cabra
    Rich goat cheese from Catalonia.
  7. Brillat-Savarin
    Gooey, creamy, stinky. Perfect.
  8. La Tur
    Cow, goat and sheep's milks come together in harmony.
  9. Maytag blue
    The Iowa classic from the founder of the appliance brand.
  10. Cambazola! Turns me into a fart monster 😔. Worth it! 👌🏻
