HOW TO BREW YOUR OWN GINGER BEER

  1. Most store bought ginger beer have really weak ginger flavors. I LOVE ginger, and wanted to make ginger beer just the way I like.
  2. Here's a guide on how to make your own ginger beer at home!
  3. Ingredients:
    Ginger, lemon, juniper berries, spices
  4. Sanitize all equipment!
  5. Boil 2 quarts of water in a pot. Add:
  6. 1 fresh ginger root, chopped
    Plus 2 tbsps of dried ground ginger
  7. Juice of 1 lemon, plus the zest from the rind
  8. A few tsp of ground cardamom, sassafras, sarsaparilla
  9. Optional: 1 tbsp juniper berries, ground up
    Adds a fresh, grassy flavor
  10. Allow it to simmer covered for 1 hour
  11. Strain into another pot
  12. Add 1 quart of lukewarm water
  13. Add 1/4 cup brown sugar and 1/4 cup honey
  14. Wait for the liquid to cool to 80 degrees
    So the yeast doesn't die
  15. Add a little less than 1/8 tsp ale yeast
    Wait for 15 minutes to proof
  16. Bottle it, leaving 2-3 inches at the top
    Add some grated ginger to the bottle for optimal flavor.
  17. Let it ferment for 2 days, then put it in the fridge for 4 days
    Look at it get all fizzy!
  18. Enjoy!
    This has a really nice, spicy ginger taste that lingers on the tongue. Try adding different spices or more/less lemon to your liking!
