What I'm Making this Week (5/16/16)

Every week I plan out a menu before hitting up the market, saving me time and $$. I'm a day late with my post this week, as we were traveling over the weekend. I didn't have a chance to get to the grocery store (I'll just be picking up a few staples tonight), so I'm falling back on some of my 'auto-pilot' meals. What are your go-to dinners?
  1. Mon: Spaghetti with Red Cabbage and Bacon
    This is one of Ella's favorite pastas. I cook chopped bacon until slightly crisp; transfer it to paper towels; then in the same skillet caramelize red onion. Next add garlic and shaved red cabbage; cover and cook until the cabbage is tender. Add the bacon back in with a few handfuls of Parmesan cheese. Swirl in spaghetti. It's great with some chopped parsley, but I'm usually too lazy.
  2. Tues: Swiss Chard and Black Bean Tacos
    Taco Tuesday! Sauté onion and red pepper until lightly caramelized. Add garlic, chili powder, cumin, coriander and oregano, then a can of drained black beans. After a minute or so pile in Swiss chard and cook until tender. For the adults, serve in corn tortillas with guacamole, sour cream, pepitas and hot sauce. For the kids, chop up the filling then stuff it into whole wheat tortillas with lots of shredded cheddar.
  3. Wed: Grilled Chicken Chopped Salad
    Quickly marinate chicken breasts in balsamic, oil and Italian seasonings then grill. Do the same thing for a few vegetables (maybe asparagus, zucchini, scallions...). Chop everything up and toss with chopped romaine, goat cheese and walnuts. For the kids, make some sandwiches out of the grilled chicken and serve the salad on the side.
  4. Thurs: ??
    Probably will clean out the pantry. Curried chickpea salad? Quinoa cakes? Maybe if it's nice out we'll picnic by the river (!)
