What I'm Making this Week (7/24/16)
Every week I plan out what I'm going to make before hitting up the market, saving me time on busy weeknight and money at the store. It's summertime, baby!
- •Sun: Lamb Sausages, Eggplant & Fennel Salad, Green Bean Salad, Baked Peaches with Ice CreamThis is a case of the 'I-bought-too-much-at-the-farmers-market-and-now-I-gotta-cook-it's'. Luckily everything is simple. Grilled sausages. Grilled eggplant tossed with shaved fennel, herbs and feta. Blanched green beans in a lemon vinaigrette with toasted almonds. Butter- and maple syrup-basted baked peaches (which are not local, since the peach crop was lost due to a late frost this year 😟), topped with ice cream.
- •Mon: Spaghetti Carbonara with Bacon and CornThis is something I'm testing for my blog (www.fromscratchfast.com). In my book, the only thing better than bacon is sweet corn. I'm envisioning a sweet and smoky, simple carbonara. Mmmmmmmm...
- •Tues: Garden TacosI know, this is exactly what I posted last week, but we ended up making quinoa bowls and fried eggs instead (adaptability is the secret to planning, no?). We'll stuff a bunch of sautéed garden veggies in tortillas with black beans, guacamole, pepitas and extra cheese for the kids.
- •Wed: ??I'll be gone for a work function, so my husband is on dinner duty! Let them figure it out!
