- •With waterThis is my favorite, cast iron skillet with a little water in the pan. There are two schools of thought, either covering the bacon completely or just covering the bottom of the pan. As the water cooks off it renders the fat to reduce splattering and cooks every slice evenly through. Once the water is gone, continue cooking until desired crispness is achieved.
- •In the ovenSecond favorite for large quantities or when you just want to set it and forget it. Turn the oven up high and convection if you have it, at least 400, and lay the strips out on foil or on a wire cooling rack on top of a baking sheet for maximum crispy. 15-20 minutes and you're done.
- •In the waffle makerI'm thinking about getting another waffle maker just to get back to doing this, it's best for small quantities. Cut the strips in half and line two per waffle section after the iron is preheated. Check and flip after about three minutes then a couple more minutes on the second side. Perfectly cooked, no mess and you can roll right into cooking @eatthelove 's excellent sounding waffle recipe with some instant bacon flavor.
