Best Potatoes You'll Ever Eat

I'm obsessed with these stupid easy potatoes
  1. Preheat oven to 425F
  2. Quarter red potatoes
  3. Toss with 2 tbsp avocado oil and 2 tbsp fresh chopped thyme on a rimmed baking sheet
  4. Roast for 30-40 minutes, stirring halfway until golden and crispy
  5. Eat them all standing up over the oven.
