Underrated Vegetables

Remember, tastes are acquired :)
  1. Sweet potatoes (home made baked sweet potato fries??)
  2. Green beans (ever tried sautéing them in a pot/pan with garlic until they get him and oily and dark green? So good.
  3. Eggplant (cut it in circles, put it in a glass dish, put tomato sauce on top with some veggies or a garnish and bake!) yum
  4. Brussels sprouts (don't eat them whole! Don't boil them! Don't steam them! No no no. You have to roast them. In an oven.) Cut off the ends and cut each one in half. Them place in a glass dish (I use a circle one) and lightly drizzle olive oil on top. Cook at 400 deg F for 20-30 minutes, checking continuously.
